Hey everyone! For all who asked about the bread recipe, I use the following one by Tartine bread.
STEP 1: Levain (I do this at night)
50g ripe sourdough starter
100g flour
100g water
Stir together.
STEP 2: Bread (the next morning)
Levain
500g flour
350g water at 80°F
Mix together until fully integrated in 1 gallon container.
Rest 10 mins.
STEP 3: Salt (after resting)
10g salt
10g water
Mix together until integrated.
Allow to rise 6-8 hours
STEP 4: Rest again
Plonk dough on countertop or baking sheet.
Rest 30-40 mins.
STEP 5: Knead
Put a little flour on your fingertips and pull and stretch the dough out, and then fold it back in. Go around the ball a few times.
Add a tiny bit more flour if it's too sticky
STEP 6: 2nd Rise
Line a medium mixing bowl or banneton with a tea towel.
Liberally sprinkle some rice flour into the bowl, onto the tea towel, to prevent sticking.
Plonk the dough into the bowl
Sprinkle more rice flour on top
Fold tea towel over to cover
Rise for ~3 hours
STEP 7: Bake
Preheat oven to 500°F with a cast iron Dutch oven inside
Once preheated, plonk dough in cast iron pot
Make a cut across the top of the dough to help the bread rise
Put lid on and bake for 20 mins
Remove lid and bake until golden brown (15-20 mins)
ENJOY with a LOT of butter!
