1) Say everything having thought. Don't say what you think.
2) Be really polite with the guest, until you are not sure, ask and clarify in detail.
3) Be confidence, pretend yourself that you know everything, at least you don't know, just say that you can clarify it.
4) Smile, but normal. Keep the formal conversation.
5) Check everything before putting something on the table.
6)  Don't take the finished plates without asking, say excuse me, is it finished, can I take.
7) Don't rush, show yourself you are calm down, listen the guest.
8) Pay really attention to the table, feel what he needs before he asks.
